Buckwheat is the best source of protein of the grain-type foods. It contains twice as much B vitamins as wheat and is a rich source of potassium, phosphorus, and iron. But beyond all that, it tastes great and is full of flavour!
If you are having difficulty finding buckwheat flour, try health food stores, bulk food stores, or ethnic markets. Many grocers will order and stock it if you seek the manager and make this request. Buckwheat flour offers benefits in taste and nutrition that is worth the quest.
